Once the cane is harvested (the months considered to produce the highest quality sugarcane are February–March and July–August) it is carted back to the distillery by donkey and immediately crushed
Minot "Boutanche" Gamay Liter 2023 Perthshire an Oregon pioneer from theOlivier's La Boutanche Gamay is sourced from his own parcel of 85 year old, certified Organic vines planted in limestone soils in southern Beaujolais. Fermented whole cluster (no carbonic maceration here) in concrete tanks, pressed, then racked back into the same tanks for aging.
